DELICACIES Cuisine of Manipal and Udupi is not only famous in Karnataka, but throughout India. The cuisines are mainly influenced from south. Manipal is a place of substance, rather than show. Though apparently a small student university town, it has all the different sorts of eateries, all eateries that serve different cuisines. Dishes of Udupi and Manipal involve coconut or coconut oil in their food. The cuisine generally comprises of dishes made primarily from grains, beans, vegetables, and fruits. The variety and range of dishes is wide, and a hallmark of the cuisine involves the use of locally available ingredients. Kadubu: Kuchchida Kadabu is very popular dish prepared on Nagara Panchami in Karnataka. A very tasty dish basically sweet mixture and spicy mixture filled in rice flaps and steamed. Fried Gram Laddoo is also prepared for Nagarapanchami festival. Kadabu/Kadubu are better known in South India, although the preparation is different. While puran kadabu are made with wheat flour, other versions are either made with all-purpose flour or rice flour, and the stuffing is often made of grated coconut instead of chana daal. Puran Kadabu are not very well known; for that matter my husband had never eaten them. But I am quite a fan. The good thing is you don't have to strain puran through food mill to make it smooth. Gruel rice/ Ganji: Gruel rice or ganji is usually in a liquid consistency and can be prepared out of brown rice and white rice. Brown rice is the unrefined version of white rice. It is highly rich in protein and other vitamins and minerals. It also contains a lot of fibre and is highly recommended for diabetic people. This is probably why it is mostly eaten in southern India.
