This past week I attended a lecture on “Food Systems and Environmentally Conscious Food Chains” presented by Dr. Caroline Krejci. Dr. Krejci talked about her work at Iowa State, which focused on the logistics of food. Her goal is to see “how can food access be improved to support producers?” Dr. Krejci also had a few key principals to keep in mind. These are: Increase the quality of food, lower food miles, know your farmer, and keep producer accountability. Dr. Krejci mentioned how Amazon is incredibly efficient, and wants that efficiency in food distribution. Dr. Krejci wants these changes for a couple reasons.
