In Michael Pollan’s The Omnivore’s Dilemma, Pollan uncovers the truth about America’s chief crop: corn. Anything from tortilla chips to “fresh” produce have some form of corn embedded in them. In the first chapter of the book, entitled, “The Plant: Corn’s Conquest”, he begins by revealing why the industrial food industry is dominated by corn. Since the days of the Native Americans, corn has been cross bred to fit different conditions and different needs.
