Gluten is a protein in wheat, barley, and rye. It has become a trend to go gluten-free, even if you do not have celiac disease, which is an intolerance to gluten. Dr. Davis, the author of the best selling novel Wheat Bellies, is the man behind this trend. In his book, he states that wheat is now filled with GMOs and is not what our grandparents used to eat. The modified wheat, frankenwheat, has an addictive quality to it that keeps people eating it says Davis.
