How does the enzyme pectinase affect apple juice production? Apples naturally produce enzymes called pectinase that breaks down pectin in the apple to make the apple much softer and juicier. To answer my guiding question I created a controlled experiment, determining that I would conduct 3 trials of both experiments I did one set of data measuring the amount of juice that is in 30 grams of apple sauce without pectinase, then proceeded to measure the amount of juice that is in 30 grams of apple sauce with 2 mL of pectinase added. First we prepared the graduated cylinders for the experiment, then we added 30 grams of applesauce to the filter and waited for all the juice to drain to measure the amount.
